Despite the fact that Easter is barely a week away, winter is still desperately hanging on. It snowed heavily again yesterday, and I suppose I should be thankful it has been less severe here in the south, than other places in the uk. Most of the snow has gone today, but the wind is still bitingly cold, and despite the daffodils flowering in my garden, spring still feels a long way away. In the meantime, I have just developed a lovely warming Tomato and Mixed Bean Soup that has just about kept the cold at bay, at least for today.
So for those of you that like a good recipe, here is one of mine. As with most soups, quantities are rough, and subject to change – depending on what I have in the fridge!
Tomato and Mixed Bean Soup
Half an onion – chopped
A medium carrot – chopped
A stick of celery – chopped
A red or yellow pepper – chopped
1.5 pints (850ml) vegetable stock
1 x 400g can of chopped tomatoes
1 x 400g can of mixed beans (drained and rinsed)
1 tablespoon tomato puree
1 teaspoon paprika
A sprinkle of dried basil
A sprinkle of dried oregano
Just throw everything into a large pan. Bring to the boil. Reduce the heat and simmer partially covered, for about 20 minutes. Season, serve, and enjoy.
